A kratip is the little woven bamboo basket that sticky rice comes to the table in across Isan, the north east of Thailand, and over the Mekong in Laos. Isan food is eaten by hand: a pinch of warm sticky rice rolled into a ball and pressed into larb (a chopped salad of lime, chilli and herbs), grilled chicken or a smoky jaew (dipping sauce). Our cooks pound som tam (green papaya salad) to order in a clay mortar, toast and grind the rice for khao khua (toasted rice powder) every morning, and grill over charcoal, weighing sour, salty, hot and herbal in every plate. Come hungry, and use your fingers.
