Ingredients

  • 400g frozen edamame beans in their pods
  • 1 teaspoon flaky sea salt
  • Optional: a pinch of chilli flakes
  • Optional: 1 lime, zest finely grated

Let's cook

  1. Bring a large pan of water to the boil.
  2. Add the frozen edamame and bring back to the boil. Cook for 4 to 5 minutes, until the beans inside are tender when you squeeze one out and taste it.
  3. Drain well in a colander and shake off the water.
  4. Tip into a bowl while still hot and toss with the flaky salt, and the chilli flakes and lime zest if using.
  5. Serve warm with an empty bowl for the pods. To eat, put a pod between your teeth and pull it out, squeezing the beans into your mouth. Do not eat the tough pod.

Tips

  • Toss them while hot and slightly damp so the salt sticks.
  • They are also good cold, so leftovers make a good lunchbox snack. Keep them covered in the fridge for up to 2 days.

Swaps

  • Garlic: toss the hot pods with 1 teaspoon vegetable oil and 1 grated garlic clove.
  • Shelled edamame: use 300g frozen shelled beans, cook for 3 minutes and eat with a spoon or fork.
