Ingredients

  • 2 red onions
  • 3 mixed-colour peppers
  • 4 chicken legs, skin on, bone-in
  • 1 tablespoon Cajun seasoning
  • 4 cloves of garlic
  • olive oil
  • red wine vinegar
  • 1 mug of basmati rice (300g)
  • 4 tablespoons natural yoghurt
  • optional: extra virgin olive oil
  • boiling water (used in the method)

Let's cook

  1. Heat the oven to 200°C (gas 6). Cut the onions and peppers into chunks, and put them in a roughly 35cm x 25cm tray with the chicken, the whole garlic cloves and the Cajun seasoning.
  2. Drizzle with oil and a splash of vinegar, season, toss, and roast for 40 minutes.
  3. Squash the soft garlic into the juices, scatter the rice around the chicken and pour in boiling water. Cover tightly with foil and bake for another 20 minutes.
  4. Check the seasoning and serve with yoghurt, black pepper and a drizzle of extra virgin olive oil if you like.
